skewered prawns

Tried and tested on a number of my blogger friends, the following recipe was a hit and there have been many requests for the recipe.

In fact at first I thought that Matt and I had prepared far too many of these skewers, but at the end of the evening there was nothing left on the plate for Benny (the cat) to lick.  So before I need to promise someone else that they will be on the blog soon, here they are 🙂

You will need:

  • 2 tablespoons lemon juice
  • 2 cloves of garlic (crushed)
  • 2 tablespoons olive oil
  • 1 tablespoon pepper
  • 1 tablespoon rock salt
  • skewers
  • defrosted raw prawns

You will need to think ahead for the following reasons : the skewers need to soak in water for one hour before use to avoid them burning in the over; the prawns need three hours in your mix before they are skewered and cooked.

First off – mix your lemon juice, olive oil, garlic, salt and pepper in a bowl. Throw the prawns in and make sure they are coated in your mixture. Give them a good rub if necessary.

Wait three hours or overnight… *fingers tapping*

When that’s done and your prawns have happily absorbed the juices (and probably started to cook in the lemon juice) you can start to skewer them.

Cook in the oven (hot grill at 200 degrees) for just a few minutes, being very careful not to overcook as they will be done really quickly. Serve alone or with a side salad and chili dipping sauce!

    lol ok see that was my problem, I added too much oil and lemon :-). I cant wait to try them out again, this time maybe they come out better. What temperature did u cook them in?
