Phil’s pasta salad

You will need:

Tomatoes
Cucumber
Olives
Feta cheese
Parsley
Olive oil
Lemon
Garlic cloves
Choice of pasta

Chop up the veg.

Cube the Feta cheese and mix with finely chopped parsley.

In the meantime boil pasta till “al dente”.

Prepare 3/4 cup olive oil, 1/4 cup lemon juice and crush 2 cloves of garlic. Mix all 3 and set aside.

Once the pasta is cooked place it in cold water to prevent sticking or mix in some olive oil.

Once it cools transfer pasta to a pot or bowl and add the veg & cheese.

Mix well and while mixing add the olive oil mix.

Continue mixing until all ingredients have blended in together.

Add salt and pepper to taste. Place in the fridge for a few hours.

Add croutons just before eating.
