Carbonara is a simple and delicious Pasta dish. It is quite rich and filling, and has many variants. Here is my version, which is really quick and simple to make. Quantities are for one person
Start by chopping up a few rashers of bacon and frying in a dry pan with no oil. You can add a little garlic and onion if you like but we kept this quick and simple.
As the bacon is cooking, beat an egg in a bowl. Now slowly add grated cheese to the egg and mix until you have a thick paste.
Once the bacon is almost cooked, add about 150ml of cream and some freshly ground pepper. Lower the heat and simmer for a few minutes.
At this stage you can prepare the pasta. Either boil up some, or you can use leftover pasta from a previous meal, as long as it is plain. 125 grams of your favourite pasta for a single portion.
The great thing about this dish (especially if you have guests) is that you can prepare the pasta, bacon/cream and egg/cheese in advance, then throw the whole lot together 5 minutes before serving dinner.
The final step is to put the dish together. If you have prepared the ingredients in advance, warm up the bacon/cream mixture. You may need to add a little milk or more cream if it has thickened too much. Throw in the pasta and egg/cheese mixture. Stir continuously on a medium flame until the egg is cooked. Serve fresh and enjoy!
