Mediterrean frittata

This is a typical Mediterranean dish made of goodness. It is quite impressive-looking and ideal when you’re cooking for a small group of people. Although it may look complicated at first, it really is quite easy to make.

The following quantities make a dish that serves 6. You will need:

  • one large onion cut in rings
  • 2 cloves of garlic, finely chopped
  • 3 rashers of bacon, chopped
  • 250g lean minced beef
  • 2 large potatoes, peeled, chopped in large chunks, soaked in water for 20 minutes and boiled until you can pierce easily with a fork
  • sundried tomatoes 60g
  • black olives 60g, pitted
  • a handful of fresh basil
  • 6 eggs
  • grated Parmesan 60g

Chop up your potato and soak in water for 20 minutes. Cook in boiling water until soft enough to pierce easily with a fork.

Slice the onions, and finely chop the garlic and fry together with a tablespoon of olive oil. Add some water whilst frying if necessary (this will cause some browning). Set these aside when the onions become soft.

Cook the beef mince and bacon until the beef has browned and cooked. When this is done mix in the sundried tomatoes, basil and olives.

In a baking dish place the meat mixture at the bottom, cover with the fried onions and cover with the potato pieces.

Whisk the eggs in another bowl

Mix in the Parmesan cheese

Pour the mixture onto the meat/onion/potato combo and spread equally

Add a dash of freshly ground pepper and bake at 180 degrees C for about 30 minutes or until the top starts to brown.
