Thai Aubergine and Prawn salad

One great thing about auberigne (eggplant) is the way it just sponges up flavour.  This dish takes about 20 minutes to prepare, but you can make it well in advance.    You will need:

1 large aubergine, diced

3 cloves of garlic, crushed

1 teaspoon sugar

1 teaspoon crushed black pepper

2 tablespoons fish or oyster sauce

2 tablespoons olive oil

1/4 cup lime juice

1 medium chilli, chopped

1/3 cup finely chopped onion

1/2 cup chopped or crushed uncooked prawns


Cook the aubergine on a steamer until tender. This should take 8 – 10 mins or slightly longer if you are using a microwave steamer.   In the meantime, combine all the other ingredients in a large bowl.


Once the aubergine is ready, put it in the bowl and stir the mixture. The lime juice and the heat from the aubergines will be enough to cook the prawns. stir occasionally until it has cooled down.  You may find the smell rather strong at this stage but once the flavours blend, it really is yummy!


Serve as a salad or side dish to an oriental main. You can also omit the prawns if you prefer!
