Mediterranean Spinach

This is an interesting way of ‘dressing up’ your spinach – especially good for those who don’t like their greens so much but are looking to increase their vegetable intake. I dare say fussy kids might enjoy this too.

Cook your spinach until it softens just enough. Try not to overcook it otherwise it will turn bland. Then chop up some olives and add this to your spinach together with capers. Drizzle on some olive oil and perhaps some balsamic vinegar. Serve hot or cold.

A real Mediterranean twist to your side dish!

    I always just dress it with olive oil, salt and lemon (put the lemon on at table as it will discolour the spinach after a few min), but am sure to try this! 😀

    not sure about fussy kids and olives though – i was a weirdo and loved them always but most kids don’t heheh 🙂

    • I can’t remember a time when I didn’t like olives either.. but I’m sure lots of kids don’t like them. It is a good way to make spinach more tasty for those who don’t like it. I usually eat it with balsamic vinegar only – so this is an interesting twist to it 🙂
