This is an interesting way of ‘dressing up’ your spinach – especially good for those who don’t like their greens so much but are looking to increase their vegetable intake. I dare say fussy kids might enjoy this too.
Cook your spinach until it softens just enough. Try not to overcook it otherwise it will turn bland. Then chop up some olives and add this to your spinach together with capers. Drizzle on some olive oil and perhaps some balsamic vinegar. Serve hot or cold.
