Oriental Mushroom Soup

This is an interesting take on your regular mushroom soup if you fancy an oriental twist. It is also a great way to turn a few ingredients into a filling meal.

You will need:

  • Fresh mushrooms, sliced or roughly chopped
  • 1 onion finely chopped
  • Bacon or pancetta
  • 1/2 cup soy sauce
  • 1 egg
  • 1-2 litres water or vegetable stock
  • ground pepper

Fry the onion until translucent. Then cook the mushrooms for a few minutes until they soften. At this point add the soy sauce and carry on sweating the mushrooms for a further few minutes. If you’ll be using it, add your bacon at this point.

When the mushrooms have cooked sufficiently (this will not take longer than 10 minutes) add your water or stock.

Lower the heat and let it simmer for about 30 minutes. Just before serving beat the egg well in a bowl and very gently add it to your soup whilst stirring continuously. Add ground pepper to taste.

  1. I would suggest to use a mix of different mushrooms including Shitake and the Chinise winter mushroom to give it a more oriental feel

    • Hmm yes that would have been a very good idea, I didn’t think of it at the time! (mainly because i was planning a simple mushroom soup and then it took a different turn all of its own accord 🙂
